Want to Make a Carrot Pickle? Don’t Second-Guess Yourself

I knew making carrot pickles would not be as hard as it sounds. When I first attempted to make one, I was so overwhelmed with the whole process that I did not push through with it. But then I realized I made a mistake because the moment I decided not to continue with making carrot pickles at home, I immediately felt the urge to eat one.

So off I went to the grocery store to look for a jar of carrot pickle. Although the carrot pickle at the grocery store was good, I was looking for something more. The taste, for me, was not enough. And that was when I thought I should have made the carrot pickle.

The next opportunity I got, I decided to push through with my project. I had all my ingredients ready on the table. At the last minute, I decided to add a couple more items: lemon juice and chili powder.

I wanted it to be a bit on the spicy side, so I added 2 tablespoons of chili powder along with the carrots. I’m sure not a lot of people will like this, but this is how I roll. It only took me a few minutes to finish the carrot pickle. Had I known it would be that easy, I would have done it a long time ago. And the best part of this whole process? The carrot pickle tasted awesome!
